There Really is a Purpose for Baking Powder...

Perhaps I am not getting enough sleep at night...

Perhaps I am getting too excited about making recipes for this blog...

Perhaps my eyesight is failing me...

Perhaps P90X at 5:15 am kills brain cells...

OR perhaps, I simply overlooked the BAKING POWDER in French Breakfast Puffs????!!!

Being a "somewhat" seasoned baker, I was astute enough to think that something just didn't seem right...like I was missing something. Unfortunately, the French Breakfast Puffs had been in the oven for a good 10 minutes when I finally realized that 3 tsp. of baking powder were sitting there laughing at me.

Something about the word "puff" makes me think they were not supposed to be heavy and dense. And that I would not get comments such as "they're kind of dry", and that 12 muffins on a plate shouldn't require being carried with two hands.

That being said, the majority of the critics liked them! In fact, Kassidy had seconds!! That girl NEVER has seconds. They all agreed to stick them in the freezer for breakfast another day. All of them that is except for Kourtney. She's still bent out of shape that there was no time left for cereal...

Moral of the French Breakfast Puffs story: If you omit the baking powder, drudge them heavily in the butter, cinnamon, and sugar. They really were pretty good...and you'll build your muscles lifting them up to your mouth.

Here's praying that I read the directions carefully on our dinner recipe tonight.

That makes me feel good that other people do things like that too! Also, baking soda in place of baking powder is not a good plan either. Not that I'm speaking from experience....

Rhonda, I have "heard" that baking powder and baking soda were not interchangeable also... ;)

I made these last night. They were yum!! I have to admit that I was worried when I was rolling them in the butter. I really do not like anything doughy or soggy and I was afraid of that. But they weren't at all. Super crispy. Alli liked them the most. She said they were the BEST "muffins" I have ever made. I'll definitely do it again.

I made these last week and everyone that tried them LOVED them. I'm guessing if you included the baking powder, you'd have 5 smiley faces. Love these and will definitely made them again. My father-in-law even thought they were great:)

DeAnn--Ha ha! Yes, I think the baking powder would bump up the smiley faces too! I need to make them again. Maybe in the am...because I am OUT OF CEREAL!!! Poor Kourtney...
