I am excited to write about all things I am passionate about...and some, well, that I may not be passionate about. But all things are happening in this LIFE. And, I want to document and have accountablity to living life with intention. And so it goes...

Finally...the Rosemary Potatoes

I have been putting off making the Creamy Rosemary Potatoes now for the last couple of months. Something about slicing potatoes really thin that was really getting to me. Yes, I am lazy, remember?

The sauce that you cook to pour over your raw potatoes is OUT OF THIS WORLD good. I could have eaten that with a spoon and been fatter and happier than I've ever been. But, I needed the sauce for the massive amount of sliced potatoes I had. I will tell you why we did not like this recipe that much. I think I had too many potatoes for the amount of sauce. Maybe it had something to do with me taste-testing too much of the sauce????

Seriously, the sauce is wonderful. The potatoes turned sort of a grayish/pinkish looking color which was unappetizing to both me and the critics. I did not bake them in a 9x 13, it was a little deeper dish and they seemed to have a hard time getting done completely. Overall the flavor was good. But I think you could almost make another half recipe of sauce to adequately cook that flavor throughout all of the potatoes.

I would make it again. Especially for company when in need of potatoes. But it still doesn't compare to our "wedding potato" recipe. Which always turns out, is just as fattening, and is much, much easier!

Hands down the sauce over the these potatoes is a 5 smiley star, but for some reason when cooked in the potatoes, it doesn't deliver the same...

Winner! Winner! Chicken Dinner!!!

Oh my goodness...where to begin?! Today, instead of having a clean house for the weekend, I have been a slave to my greasy kitchen---pretty much all day. It was well worth it, the critics exclaimed as they ate their fried chicken and Delicious, Creamy Mashed Potatoes.

Because I am trying to attain the title of daughter-in-law of the year, paired with the fact that my father-in-law absolutely LOVES fried chicken, we invited them to our house for the 2nd meal made mostly of recipes from this woman. Can't say they complained though when the smell of fried chicken welcomed them in through the door.

It was as down-home as you can get over here tonight. Good 'ole fried chicken, Delicious, Creamy Mashed Potatoes, and gravy. The critics were restless and could hardly get through the prayer.

Fried chicken may be one of my very least favorite things to make on this earth. I do not like cutting up a chicken, for one. I am horrible at it. No pieces were identifiable tonight and everyone got a kick out of that. Yes, you're welcome, family, for the free Friday night entertainment. I also do not like touching raw chicken. I feel like I am swarming with salmonella and I have to wash my hands over and over again. And I still feel contaminated. PLUS, I am not a fan of grease spritzing all over my clean stovetop, shirt, face, and countertops. But that's just me. All of that being said, there are times in my life that I will put all of that aside and fry a chicken for my family. How's that for a martyr?

This fried chicken recipe is the BEST that I have ever come up with. It is in her cookbook that you all hopefully own by now. I could not find it on her website anywhere-- (althought there is something similar that I will be posting about another day). Everyone loved the chicken and did not seem to care one bit about the agonizing I did to prepare it. Again, martyr!!!

A sure winner, along side the fried chicken is the Delicious, Creamy Mashed Potatoes. Do you want to make someone happy? Make these potatoes. Do you want to make someone feel like they need to immediately jump on the treadmill? Make these potatoes. Do you want to be daughter -in-law of the year? Make Delicious, Creamy Mashed Potatoes.

And now, I am going to tackle my greasy kitchen. Because in the end, it is all worth it to see such fine smiley stars!

OH MY, MY, MY!

Delicious. That's all I can say. All Landon could say tonight was "please give me mo potatoes!"--over and over again. He had four servings of Perfect Potatoes au Gratin and said "my star is this happy, Mommy!". Oh no, the critics have caught on to what I am doing...

It amazes me that something this simple can be so good. But then again, you take a look at the ingredients and you are not going to go wrong. I am wavering on this being even better than our "Wedding Potatoes" that I always make. It is SO close, I can not even rank them. I think I will have to put both recipes in a hat and draw to see which I make the next time I make a potato dish!

I made these tonight with german sausage and a fresh salad. Perfect Potatoes au Gratin were the very center of attention tonight, and they earned every right to be.

This one's a keeper.
